I have family members with non-celiac but severe, genuinely medically dangerous gluten intolerance. People still sometimes give them a hard time because they don't have the one type of gluten intolerance that's, idk, most mainstream?
Meanwhile, all these alleged hordes of fakers everyone likes to complain about have revolutionized the availability of gluten free foods, so that my relatives can enjoy nearly as many restaurants and grocery store products as gluten tolerant consumers can.
If you have a relatively rare dietary requirement, I guess try convincing attention-seekers that they also have it, so that your safe food category can gain a larger market share, lol.
